A few years ago, I set out on a quest to perfect it at home and found this recipe from the world famous Thomas Keller. It&#039;s the only way I cook chicken now. I make sure to hit up Whole Foods or my local farmer&#039;s market for the highest quality chicken I can get and keep the chicken at about 2-2.5 lbs. It&#039;s never failed me!
