One of the best buys in your stores is the roasted chicken. One chicken serves our family of 4 three meals. Day one we eat a roast chicken dinner with vegetables and potatoes as sides. On day 2 these left overs, including the vegetables, make delicious quesadillas using whole wheat flour tortillas and cheese. By day 3 the chicken carcass, left over chicken, brown rice, celery, carrots and corn make a mouth watering soup. My family never complains about these left overs. And sometimes someone gets to take some of these healthy left overs to work for lunch.
