I try to never throw out "past prime" fruits and vegetables. For example, I roast vegetables with a bit of olive oil and use them in salads or over pasta. I take tomatoes that are a bit squishy, chop them up and cook them with onions and spices into a fresh tomato pasta sauce that I can freeze for later if necessary. Cut up fruit that is a bit past its prime works well in a cobbler or even homemade ice cream.

Also, whenever I have a chicken or a turkey carcass, I always boil it down to make homemade broth. It make the kitchen smell wonderful and the strained broth is superior to anything I can afford to buy. Plus, it is easy and another way to stretch my food dollars.
