I think the easiest way to use leftovers is to make soup. Soups are for everyone from meat lovers to vegetarians. So, be creative start blending and making your own signature soup.

If soup is not to your liking you could make a surprise pie. Use already made crust, fill it with leftovers, add your favorite gravy and bake.

In addition to Friday night pizza (something I also do with WFM pizza crust), I'm a big fan of using leftovers for fritatas. I just saute some leftover veggies, throw in some meat (ham, bacon, smoked salmon, whatever...) and cheese (whatever is on hand that goes well with the combo), and I've got dinner and lunch for a couple of days.

My mother always made what we kids called "End of the Week Stew." I always vowed that I would never do that to my own children, but have changed my tune these days. I switched my mother's flour laden gravy with a light chicken broth or vegetable stock and keep away from red meats. Usually it comes out as a nice "End of the Week Soup." A fresh loaf of French bread with it makes it a nice meal.

About once per week to every other week we have a meal called "Hodge Podge" ... basically making a 'stir fry' in a sense with our leftovers. Saute up the left over veggies, throw in some cashews, the left over chicken, maybe some raisins and spice it up with some fun spices like Indian spices or red pepper flakes. We also use dry sherry and a bit of sour cream for a quick creamy sauce and serve over rice. Simmer sauces you can find in jars are great to have on hand for such a meal too!!

I am all about no waste! I have a couple of recipes on my website for using up leftovers or whatever's gone stale.

Here in the UK we are a fan of curries. Most meat and vegetables can me mixed with spices, garam masala, tomato puree and stock to make a tasty, exotic curry.

I also have a passion for my freezer, any uneaten rice, bread whatever gets stored away for another day.
