Joanna – your muffin idea is terrific and gives me a great hint of how to re-express sweet potatoes within my 2008 Thanksgiving menu which is themed “Change.” For instance instead of Mom’s green bean casserole the flavors will instead becoming a green bean bisque with wild mushrooms garnished with crisped onions. And thank you to Whole Foods for being there with virtually all the items I need, and those I don’t need but discover and enjoy.

Hi Ron, I was just doing some last minute checking before my final T-day shop and your green bean bisque sounds amazing. My sister is slated to make the traditional “green bean casserole” for T-day but I am going to give her this idea instead. Any hints on the recipe?
