One of my favorite ways to eat 'healthy' fat is to spread soft ripe avacado on toasted whole-grain bread and sprinkle a tiny bit of salt on top.

(Mostly I use the toast as a carrier for the avacodo, my favorite fat-fruit.)

Thanks,
Molly

Great article a la Udo. The fat phobic are definately risking their health. Essential fats are essential for the integrity of every cell membrane, including the brain, eyes, heart etc etc.

Even vegetarians and vegans can now get long chain essential fats succesfully from a variety of plant based oils that skip the hurdle in the omega 3 biological conversion pathway or new algae oils that have pre converted DHA and EPA.

Flax oil has been superceded by more delicious, versatile and dynamically effective oils.
