Hi guys! I work at a day care and we wanted to make ice cream as a fun summer treat, however we have a lactose intolerant student in our group. I read above that you can substitute coconut milk for regular milk, does that also work with the regular home made ice cream. (Put it in a bag and shake it?)

thanks!

We use coconut milk for beef stroganoff, Swedish meatballs and mac and cheese. For mac and cheese I blend the coconut milk with some onion and garlic powder, a little turmeric for "cheddar cheese" color, and some sort of starch for thickening. I have even blended it with cashews to thicken the sauce and sneak in some protein. If the addition of lemon juice to make a sauce less sweet and more tangy yields gloopy clumps, then throw the sauce in a blender, or a container for use with an immersion blender. It will de-gloop it and you will have a nice thick, rich, creamy sauce. I just bought a used ice cream maker so I am searching for coconut milk ice cream recipes.

Coconut Milk Salmon over rice
2-3 Med Potatoes Peeled and sliced 1/4 in thick
1-2 Tomatoes diced
1 lb Salmon (skinned and cut into 1 inch cubes.)
1 Can of Regular Coconut Milk
Salt to taste

Prepare Rice as directed

In Large Sauce pan put one layer of potatoes then a layer of salmon then sprinkle on tomatoes then add another layer of potatoes, salmon, and tomatoes. Continue until all Potatoes, salomon and Tomatoes are in pot. Pour coconut milk over top. Use a small amount of water to clean all coconut milk from can and pour over ingredients in pan.
I'd like to see a recipe makeover for sweet potato casserole and macaroni and cheese. These are family favorites, but i'd like to cut the fat and sugar while maintaining the sweetness of the yams and the creaminess of mac and cheese.

thanks,
pat
