Olive and Sinclair Chocolate Company

A former pastry chef, trained at Le Cordon Bleu, Scott Witherow returned home to Nashville and started Olive and Sinclair with a mission to make really great southern artisan chocolate. Building from just two ingredients – cocoa beans and brown sugar – Scott then incorporates local coffee grounds, cocoa nibs, and salt & pepper, to create seven varieties of hand-crafted chocolate bars.

Olive and Sinclair Chocolate is to die for–particularly the Cinnamon Chili. Will Whole Foods be carrying it in the Jacksonville, FL store? My niece interned at O&S last year and brought the family in Florida some of O&S chocolate at Christmas. Since it has all been gone for months, I have been having withdrawals. Please carry it in Jacksonville!

Finally, a chocolate without processed white sugar but the brown color minimally processed kind. Usally from either Columbia or Hawaii.

Bought two bars at The Produce Place – salt & pepper and chili. My budget doesn’t normally allow for $5 chocolate bars, but when I can splurge or have a coupon ($20 local deal/store coupon paid for most of the total for the bars plus a bottle of olive oil), I’ll certainly buy this bar again. Would like to try other flavors they offer. Some of the very best chocolate I have ever tasted. I like supporting local business. Just wish it wasn’t so expensive, but I guess for such great quality, that’s what you have to pay.
