Breakfast is my favorite meal of the day. I would gladly eat breakfast-type foods for all my meals (sometimes I do, actually). My favorite breakfast these days is this delicious, easy to make, baked french toast:

I’m doing alot of quick microwaved egg white scrambles-2 minutes in the microwave-super easy.

Eggless Western Omelet:
Onions, Garlic, Mushrooms, spinach, yellow, red, orange bell peppers, cheese,(I use soy sation), avacado, mild saulsa. It is best to sautee the onions, garlic, and peppers first in olive oil and a touch of worsteshire sauce, then add the mushroom for a few minutes then turn down, and add the saulsa, avacado, and cheese and simmer until done.
You can also use tofu instead of avacado
You can enjoy with your favorite toast or fill a pita pocket.
This is also great minus the cheese and topped with a little sour cream and served with chips as an appetizer.

I despise breakfast and have since I was a kid. I’m trying to significantly change this and recipes that can be made ahead or are quick and easy are very welcome. Thanks for helping expand my breakfast horizons.

I love the granola I pick up from Whole Foods. I add it to some yogurt and fruit and it is the perfect breakfast for me. I actually think I have found the best tasting, healthy, packaged granola out there. I wrote about it on Fed Up;
