Winter Meals for Four on a Budget

If you’ve ever sampled some of the fabulous fare in our Bakery or Prepared Foods areas during the holidays (or any time of year, really) you know we’ve got some very talented team members working for us.

For the holiday issue of The Whole Deal value guide, we challenged team members from these departments to send us their own best, budget-friendly, small-bites recipes. Here are the two winning recipes picked by our panel of judges and more about the team members who created them:

Bacon Jalapeño Stuffed Mushrooms created by Elizabeth Hernandez, Prepared Foods Team Member in our Willowbrook, Illinois store.

Elizabeth set out to create a holiday appetizer that incorporated all five taste sensations … sweet, sour, salty, spicy and savory. Plus, she wanted it to be wallet-friendly, simple to make, attractive on a serving platter and delicious. Voila! Bacon Jalapeño Stuffed Mushrooms were born.

Preserving Fall’s Bounty

“Waste not, want not.” This bit of old-fashioned advice never gets old! And with the fall season’s prolific produce making an appearance, these ten simple tips from The Whole Deal value guide will have you preserving the best of the harvest. You’ll save money, learn some new tricks and eat well all year.

  1. Quick pickle veggies such as carrots, radishes, beets, peppers and onions in white vinegar to keep a few weeks in the fridge.   2. Hang or oven dry peppers and store them crushed or whole in airtight jars.
  3. Store root vegetables like carrots, beets, onions, potatoes and turnips for a few months longer in a cool, dry storage area like a root cellar or basement.
  4. Dehydrate and concentrate flavor in fruits and vegetables by drying them in the oven (or in thin slices all day in the sun); try homemade Dried Apple Slices.
  5. Stew a medley of fruits in a splash of water with warm spices and a few chopped dates or a little sweetener of your choice. Serve warm or cold. You can also make your own applesauce.
  6. Quickly blanch and freeze greens to use for quick sides and easy meal prep with less fuss.
  7. Freeze purees, pestos and soups for big fall flavor payoffs later in the winter. Use our advanced search to find recipes with your favorite flavors or that meet any special dietary needs.
  8. Line-dry herbs like lavender, rosemary and thyme by hanging them up in airy open spaces and then transferring to airtight jars or the freezer for storage.
  9. Brandy fruits such as plums, apricots, peaches and pears by soaking in brandy for a few days or weeks to serve alongside roasted meats or over ice cream or pound cake.

Is the weather cooling down where you live? Here in Austin we’ve gone from a sweltering summer of triple-digit temps to what we now all consider the refreshingly cool high 90s. Hopefully, our outdoor thermometers will continue to dip because fall in central Texas really can be quite lovely.

Budget-Friendly Meals: Take the $5 Challenge

When you think “value meal” do you think of greasy foods served through a drive-thru window? Well, think again! Slow food – the opposite of fast food – is food that is good for you, good for farmers and workers, and good for the planet. It’s all that and it doesn’t have to cost any more than fast food! Now that’s what I call a value meal! And that’s why on September 17th, Slow Food USA launches a Day of Action and encourages everyone to take their $5 Challenge and take back the value meal.

According to Slow Food USA, all you have to do is pledge to cook a fresh and healthy meal for five dollars or less, or you can attend a local event. It could be your regularly nightly meal with your family, a dinner party with friends, a neighborhood potluck or a slow food meal event in your area. The only “rule” is that the meals should reflect slow food values and cost no more than five dollars per person.
