Colorful and hearty, this salad benefits from being chilled before serving, so plan accordingly.

    Ingredients: 
    • 1 (15 ounce) can no-salt-added pinto beans, rinsed and drained
    • 2 plum tomatoes, chopped
    • 1 red bell pepper, seeded and chopped
    • 1 cucumber, chopped
    • 1 stalk celery, thinly sliced
    • 2 tablespoons Dijon mustard
    • 2 tablespoons fresh lime juice
    • 1 tablespoon chopped fresh parsley
    • 1 teaspoon ground cumin

    In a large bowl, combine all ingredients. Chill for an least an hour before serving to let the flavors blend together.
