Quick and Spicy Tamari Nut Mix

Makes 3 1/2 cups

Served warm, this irresistible treat is extremely flavorful and aromatic, but room temperature is amazing, too. If you don't "do" spicy, omit the cayenne.

    Ingredients: 
    • 2 teaspoons peanut or canola oil
    • 1 cup shelled pumpkin seeds
    • 1 cup shelled peanuts
    • 1/2 cup cashews
    • 1/2 cup pecans
    • 1/2 cup almonds
    • 1 tablespoon soy sauce or tamari
    • 1/8 teaspoon cayenne pepper
    • 1 tablespoon fresh lemon juice

    Method: 

    Heat oil in a large sauté pan over medium heat. Add nuts and sauté, stirring often for 3 to 5 minutes or until nuts begin to turn golden brown. Immediately drizzle soy sauce or tamari over mixture, and sprinkle with cayenne and lemon juice. Remove from heat and combine all ingredients. Cool for a few moments and serve. Leftover mixture can be stored at room temperature for up to one week.
