Tarragon Mayonnaise

Makes about 1 cup

A rich, flavored mayonnaise like one can easily double as a sauce for everything from roasted fish fillets to steamed artichokes.

    Ingredients: 
    • 1 cup mayonnaise
    • 1 1/2 tablespoon finely chopped tarragon
    • 1 tablespoon finely chopped white onion
    • 2 teaspoons lemon juice
    • pinch of cayenne pepper
    • Salt to taste

    Method: 

    Put all of the ingredients into a medium bowl and whisk well to combine. Use immediately or cover and refrigerate until ready to serve.
